Maldi

Maldi

Maldi is a traditional Indian sweet delicacy originating from Gujarat. It consists of deep-fried flour ribbons or strands that are crunchy and coiled into a round shape, similar to a nest. These crispy spirals are then soaked in sugar syrup flavored with cardamom, giving them a sweet, delicate taste and brittle texture. The preparation requires skill to create the thin streams of batter that form the characteristic spiral pattern. Maldi is often enjoyed during festivals and special occasions, served as a snack or dessert.

The founder

Gayathri Mruthyunjaya

Founder & Partner, Henchu

For thirty-five years, cooking has been Gayathri's passion. In her Malleshwaram kitchen, she cooked for birthdays, festivals, and family, with recipes she carried in memory and never wrote down. That passion has now grown into a company. A team of mothers cooks alongside her today, and every dish carries the name of the mother who made it.

Gayathri built Henchu as a platform for every mother, so that experience is never missing recognition again.

Our story

The word henchu is a cooking pan.

Henchu began with a simple question. What if the best food in Bengaluru wasn't in a restaurant, but in someone's home? We set up a kitchen in Malleshwaram, one of the city's oldest neighbourhoods, and invited our mums to bring their family recipes. No standardisation, no restaurant chefs. Just honest food, made the way it's always been made.
